Easy Omelet

Few Sprays of Olive Oil
1 cup fresh spinach leaves
4-6 egg whites
1 tomato, chopped
1/4 avocado, sliced
Freshly ground pepper and salt to taste

Heat the pan and spray with olive oil. Place the spinach in a pot of boiling water for a few minutes, so it softens. Whisk the egg whites and pour into a hot skillet. Eggs should be cooked thoroughly so that the bottom is browned, and then flip the omelet to the other side.

Place spinach, tomatoes and avocado on one half of the omelet without removing it from the pan, and make a neat roll. Hold it in a pan for a few seconds and neatly lay it out on a plate. Sprinkle with pepper and salt.

Meditate
